Nothing starts my day better than a good breakfast. Just a few months ago, breakfast was hardly a priority for me. I basically considered lunch the first and most important meal of the day (aside from the occasional weekend brunch).
Now, breakfast is a staple for me. Not just eating it, but the act of getting out of bed and taking a few moments to let my brain start working and wake me up a bit. After I’ve made and eaten breakfast I feel ten times more ready to take on the day and so much more productive.
I truly believe there’s a science to it.
Whatever I have going on early in the day determines what I end up making for breakfast. I definitely have my go-to’s. Taste, simple prep and easy clean up are all important breakfast factors.
My favorites range from the super simple to the more complex, but these four are easy to implement into almost any morning routine.
Granola Cereal
You need: Your favorite brand of granola cereal, milk, crasins, almonds (if they aren’t in your granola), sliced banana.
The make: As easy as it sounds –combine the dry ingredients in a bowl, add milk and enjoy!
Why I love it: When I’m pressed for time but want to take a moment to get my mind together and leave the house without a rumbling stomach, this does the trick. The banana and granola add the perfect sweetness and the Crasins and almonds add a savory crunch.
Green Smoothie
You need: Your favorite greens (I love spinach and kale) and a few of your favorite fruits (I love mango, apple and pineapple), ice, water and a blender.
The make: Toss the kale, spinach, chopped mango, apple and pineapple into the blender. Add ice and a bit of water and blend until smooth.
Why I love it: If I know I have to eat on the go but want to feel really satisfied, this does the trick. You can toss it in a to-go cup and take it with you or enjoy it at home. Clean up is pretty simple and because the ingredients are things I usually have around it’s no trouble to make.
Breakfast Burrito
You need: Eggs, salsa, bell peppers (green, red, orange –jalepeno if you like a little kick!), cheese (I go for colby-jack), avocado (or the guac from Whole Foods which is everything), tortilla.
The make: With a bit of water, cook the peppers until they’re tender –then set them aside. Scramble the eggs and as they cook, add in the peppers. In a separate pan, warm your tortilla on both sides and set it on a plate. Add the egg mix and top with avocado/guac and salsa. Wrap it up and enjoy (or wrap it in foil and take it with you).
Why I love it: It’s amazing delicious, uses minimal dishes and keeps me full until a very late lunch.
Toast w/ Honey & Greek Yogurt
You need: Bread (I always opt for whole wheat) and honey + your favorite greek yogurt (plain or flavored –I prefer plain.)
The make: Toast the bread and evenly distribute honey. In a bowl, add greek yogurt and a bit of honey. Bon appetite.
Why I love it: When I have to get up super early, I usually don’t have much of an appetite. This meal is super simple to make and eat and holds me over until I’m actually hungry.
And of course, almost all of these (minus the smoothie) are usually enjoyed with a cup of coffee.
